I volunteered to make cookies for the church group that goes to nursing homes the first Sunday of every month. This was the second time I volunteered so I wanted to make something different than the chocolate chip and glazed pumpkin cookies I made last time. Judy just had this recipe from her sister that she wanted to try so I asked if I could make them. First time I made snicker doodles and they were so easy and tasty. I would recommend them to anyone.
2 tsp vanilla
1 package yellow cake mix
1/3 cup oil
2 eggs
equal parts cinnamon and sugar
Pre-heat oven to 375 degree
In a bowl combine vanilla, cake mix, oil and eggs. Stir until well blended.
In a pie dish combine sugar and cinnamon.
Using an ice cream scoop, gather dough into round balls and plop into cinnamon-sugar mix and coat until lightly covered.
Place coated dough on parchment lined cookie sheet and bake 8-9 minutes.
